JAZZ™ bread with apples and tahini

Makes 1 medium loaf

260g cake flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon mixed spices

¾ teaspoon of salt

2 medium JAZZ™ apples, unpeeled, cored and coarsely grated (about 1 cup)

75g white sugar

75g brown sugar

100 ml full cream, natural yoghurt

¼ cup vegetable oil

¼ cup tahini

2 large eggs

1 teaspoon vanilla extract

finely grated zest of 1 lemon

white sesame seeds, to garnish

1. Preheat the oven to 180°C. Butter and line a 22 x 12 cm cake tin. Combine flour, baking powder, spice mix and salt. Add the grated apple and mix.

2. Whisk together sugars, yogurt, oil, tahini, eggs, vanilla and zest. Stir the flour and apple mixture into the yogurt and tahini batter.

3. Pour the batter into the greased cake tin, smooth the top and sprinkle with sesame seeds to decorate. Bake until a toothpick inserted in the center comes out clean, about 60 to 70 minutes. (Hint: Listen carefully to the bread. If it still sizzles, return it to the oven for about 5 more minutes.) Remove from the oven and place on a cooling rack to cool for 15 minutes.

4. Bread is delicious the day of baking or store in an airtight container. Serve with a nut butter spread, JAZZ™ apple slices and a sprinkle of sprouts for a healthy and delicious snack.

JAZZ™ apples are sold exclusively at Checkers stores.
