I saw a recipe for Sweet Alabama Pecan Bread the other day and decided it sounded good, and I was sure I had some pecans on hand. No. But I had a packet of omega-3 trail mix that contained pecans (as well as almonds, pumpkin seeds, and dried cranberries), so I made a little substitution. I’m not sure I could ever follow a recipe as written, just on general principle. (Thanks Mom!)

This trail mix bread recipe turned out great! The cranberries give it a little tangy sweetness. Perfect for a snack, breakfast or even dessert.

Ingredients
Here’s how to do it:
- In a large bowl, combine the brown sugar and brown sugar with the oil and melted butter. Add the eggs and mix until there are no more sugar cubes. Add vanilla, flour and salt. Mix until homogeneous. Stir in trail mix. Pour the batter into a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray.
- Bake in preheated 350 degree F oven for 30 to 35 minutes or until lightly browned and a toothpick inserted in the middle comes out clean. Let cool 15 minutes before cutting.
