For the bread

2 1/2 tsp.

Zest and juice of 1 large lemon

3/4 tsp.

extra virgin olive oil

1/2 tsp.

packed light brown sugar

Bread

  1. Preheat the oven to 350° and grease a 9″ x 5″ loaf pan with cooking spray. In a large bowl, whisk together flour, baking powder, ginger, baking soda and salt.
  2. In another large bowl, whisk eggs, lemon zest, lemon juice, granulated sugar, oil, brown sugar and vanilla to combine. Add to the dry ingredients and mix until only a few dry streaks remain. Stir in zucchini and seeds until just combined. Pour the batter into the prepared pan and smooth the top.
  3. Bake until tester inserted in center comes out clean, about 1 hour. Leave to cool in the pan for 15 minutes, then unmold onto a wire rack.

In a small bowl, combine the granulated sugar and lemon juice. Brush all over bread while still warm. Let cool completely before serving.
